Spice up your summer with delish dishes!

It’s summer and your friends at Reunion couldn’t be more excited! And now that it’s hot outside, time to lighten things up. No, we’re not talking about your hair color. We’re talking about meals! No more chilis, stews, or heavy meats. Let’s gravitate towards the sweet, tangy dishes with less sauce and more fresh fruits and vegetables.

We’ve found a few recipes we think will be perfect for the season. We advise you to double the portions, and then when you realize you have too much food, we’ll come over and help you get rid of it. What are friends for? These recipes also work as dishes you can bring to family picnics and cookouts.

Summer Corn Salad

Summer is the best time of year for salads. And this one looks light, flavorful, and delicious. It’s full of corn, basil, cucumber, feta, and tomatoes, and it’s quick and easy to make. Bring it to your next family picnic, company potluck, or outdoor dinner party. Or just keep it all to yourself. It will be a hit either way.

Tropical Crispy Chicken Summer Rolls

Spring and summer rolls are menu items that are hard to resist. So why not try a hand at making your own? This recipe combines the tantalizing flavors of crispy chicken, avocado, and mango. And while preparing and rolling these up can be a daunting process, it’s also a bit therapeutic. And it’s a fun activity for the kids.

Peach BBQ Pork Sliders and Apple Cole Slaw

Sliders are such a tasty and easy dinner option for the family. Serve them as appetizers or add sides and make a meal. For this recipe, you’ll have to pull out your crock pot so that it can do all the hard work. And yes, crock pots are just as useful in the summer as they are in the winter!

Grilled Lime Salmon with Avocado-Mango Salsa and Coconut Rice

This is a restaurant-quality meal that you can make at home. You’ll love the combination of the slightly charred lime salmon with the sweet, fruity salsa and the rich, creamy coconut rice. Whip it out for a special occasion or pick a gorgeous evening to set the table outside for a romantic dinner with the spouse.

No Bake Summer Berry Icebox Cake

If you need a quick and easy dessert recipe to bring to a party or just to satisfy your sweet craving at home, this delicious cake should do the trick. It’s cooled down in the refrigerator so it’ll be a refreshing treat on a hot day. This cake is also perfect to make in hot weather, because you won’t have to crank up the oven.

So how hungry are you now? Good luck with these creations — don’t expect them to last long as leftovers. (Again, we can help with that.) And now that summer is in full swing, we hope to see you at the Rec Center pool or along the trails enjoying this beautiful weather!
