Indian-Style Roasted Beets and Carrots with Cream

If you’re looking for a good, cold-weather vegetable-focused recipe, this one should fit the bill. Tender beets and carrots are the “meat” of this meal, but aromas of the cumin, coriander, and ginger will fill up your kitchen and give this dish a nice hearty flavor.

Saucy Pulled Pork Sandwiches

Break out your favorite paprika variations – this recipe lets you add your choice of paprika to the meat as well as the sauce. And though this one cooks for around 10 hours, there’s 12-14 servings in the pot, enough for a big family. Make sure you toast the hamburger buns to give your sandwich extra crunch.

Smoky Turkey and Sweet Potato Chili

It’s chili season! In this recipe, chipotle chiles add a kick but sweet potatoes balance the heat. Buy the large dried lima beans if you can find them – they look amazing and can give the chili a decidedly southern accent. The recipe suggests a Mexican beer but any lager-style you like should do the trick.

Tried-and-True Chili Mac

Someone combined delicious chili with comforting mac and cheese and it’s wonderful – perfect after a long hike around the neighborhood’s trails in cold weather. This recipe can be cooked at a high-heat setting at 2-3 hours or a low-heat setting at 4-6 hours, depending on your preference.

Texas Beef with Butternut Squash

This simple recipe combines lightly spiced beef chuck roast with soft butternut squash. A surprising ingredient is unsweetened cocoa powder, which gives this dish a rich flavor. Serve with a side of crusty French bread to soak up the sauce.

Did your stomach just growl? It’s understandable, crock pot recipes always sound fantastic. What are some of your favorites? Please share them with us – we are always on the lookout!
